Elephant Bar’s Healthy Dining choices include:

•    Vietnamese Shrimp Spring Rolls
Steamed shrimp, rice noodles, carrot sticks, bean sprouts, fresh mint, cilantro, green onion and bibb lettuce, all rolled in a soft, delicate rice paper wrap. Served with Oriental slaw, chilled tamarind macadamia nut sauce and Thai peanut sauce for dipping. One-half of a portion has 200 calories, 4 and one-half grams fat, a half-gram of saturated fat, 3 grams fiber, 8 grams protein.

•    Oriental Chicken Salad - * Special Request
Teriyaki marinated and grilled chicken strips over shredded lettuce with roasted peanuts, sweet peppers, cucumbers, mango, Mandarin oranges, and topped with crispy rice noodles. (* Request dressing on the side, not included in analysis. 1 T. has 55 calories, 5 grams fat. Fried Wonton wafers also not included in analysis.) 645 calories, 25 grams fat, 4 grams saturated fat, 7 grams fiber, 48 grams protein.

•    Fire Grilled Mahi-Mahi Sandwich - * Special Request
Teriyaki marinated fire grilled Mahi-Mahi on a toasted whole-wheat bun with lettuce and tomato. Served with tropical fruit salsa and garden salad. Request no mayo on sandwich, salad dressing and croutons on the side (both not included in analysis). 580 calories, 25 grams fat, 6 grams saturated fat, 8 grams fiber, 45 grams protein.

•    Fiery Kung Pao Shrimp
Shrimp stir-fried with red and green peppers, marinated and baked tofu, roasted peanuts, water chestnuts and hot chili peppers. Finished with diced green onions and served with steamed white rice. One-half of a portion has 550 calories, 2 grams saturated fat, 5 grams fiber, 29 grams protein. H&O
